With mediterranean flavours of sun-dried tomato, feta, and artichoke, the light citrus punch of the dressing, and the heartiness of chickpeas, asparagus, and orzo, it’s robust enough for a standalone lunch, but versatile enough to serve as a flavourful side dish for dinner. This salad is a great way to make use of peak season veggies, and this version of the recipe is vegan-friendly.
